We have been wanting to make crockpot fajitas for the longest time now – and we finally did last week! They turned out awesome and it was super easy. We used fresh veggies: green peppers, hot peppers and tomatoes. We leave out onions because someone doesn’t like them (Charlie!). We also wanted to try out the Fajita Rub my sister got us from Williams Sonoma. All you do is rub it into the meat you’re using, and we also sprinkled a little on top of the veggies.
After I rubbed the Fajita Rub onto the chicken, I put the chicken into the bottom of the crockpot…
Then I started layering the veggies. We did peppers first then the tomatoes. We’ve found that tomatoes make fajitas taste SO much better. Also – it may look like a ton in this picture, but the tomatoes pretty much just create liquid that the chicken marinates in. They basically disappear after a few hours.
We put the crockpot on high for 4 hours and let em cook! It actually only took about 3-3.5 hours to fully cook. If you’re turning the crockpot on in the morning then leaving for the day, put it on low for 7-8 hours.
Ok, I know it really doesn’t look that appetizing in this picture, but trust me when I say these were some of the best fajitas we’ve ever had. SO. GOOD. That rub is awesome and we highly recommend it.
We may try these next time by using a different seasoning or making our own just to compare tastes. If you have a seasoning you’d recommend we would love to know what it is!
This looks delish! I’ve only ever added the fajita seasonings to a skillet but I bet this rub/crockpot method gives it so much more flavor. Will have to try, thanks for sharing!!
